Ingredients
- 1 cup fresh green or red rocotillo chile peppers (you may substitute your favorite chili peppers)
- 1 small red onion
- 1 green bell pepper, seeded
- 1 red bell pepper, seeded
- 2 ripe mangoes, cleaned
- Juice of 3 oranges
- 1/2 cup pineapple juice
- 8 tablespoons lime juice (about 4 limes)
- 1/4 cup chopped cilantro
- 2 pounds sea scallops
- Salt and freshly cracked black pepper to taste
