Corn Country Squares
Serves about 4 Makes nine squares
Ingredients
- 1 cup cornmeal
- 1 cup flour
- 3/4 teaspoon salt
- 4 teaspoons baking powder
- 1/4 cup sugar
- 2 eggs
- 1 cup milk
- 1/4 cup vegetable oil

Directions
- In a large bowl mix together well all dry ingredients; in a medium bowl beat together eggs, milk and oil. Mix wet ingredients into dry, stirring to blend quickly (do not overmix). Pour batter into a greased 8x8-inch baking pan. Bake in a 400 degrees F. oven for 20-25 minutes, until very lightly browned on top. Remove from oven, let cool slightly and cut into squares to serve.
- Serve with a whipped honey butter.
